The meat had a strange smell when it came out of the vaccum sealed bag, why?
The meat in the package has been deprived of oxygen since it was sealed, so as you open the bag the gas will be released. Give it a few minutes to air out on the counter and take another whiff. It should smell different from your average meat (that’s a good thing!). It should never smell sour or feel slimy - if it does, let us know. It’s a sign that something’s wrong.
-
Where does your meat come from?
We source our meat from Australia's best meat producers and wholesalers. to find out more about the origins of a piece of meat on the floor, ask one of our friendly floor staff and they will happily tell you all about it! We also source a large majority of beef from our family farm which is at the base of the snowy mountains in the Upper Murray region of NSW. Our cattle are prime black Angus and Wagyu Cross which are 100% grass-fed, single-origin and antibiotic-free. Look out for the products in-store with the Our Farm sticker on it!

What difference does ageing meat make?
Aged beef just tastes better. Supermarket beef is very rarely aged, and the very best beef usually is. Beef has a natural tenderizing enzyme in its muscle fibers. That enzyme works for up to 8 days. Meanwhile, as the meat continues to age, it evaporates water from the muscle, which keeps the flavour concentrated.
Here at the Australian Meat Emporium we both wet age and dry age our beef products. When you come in store you will see our hanging meats which are in the process of dry-ageing. We dry-age our meat for a minimum of 25 days and sometimes it can be aged as much as 40 days. This creates a unique and concentrated flavour which makes it the perfect special treat!

How long can meat last in the refrigerator?
On average you should consume or freeze your (vacuum sealed) product within 7 days of its arrival.
- Poultry needs to be consumed or frozen as soon as possible or within four days.
- Pork should be consumed or frozen within 5 days of delivery.
- Lamb should be eaten or frozen within 7 days of delivery.
- Beef is unique. Beef that is whole should be eaten or frozen within 10 days of delivery. That being said, beef can last longer. As long as the meat doesn’t smell sour or feel slimy you are good to go.
